Tomato Basil Chicken— Quarantine Cooking

Social distancing has given me time to reset, reestablish my routine, but most importantly, try new recipes!

I’ve been whipping up meals that are nutritious and delicious. This tomato basil sauce has a light and herby flavor, and all it takes is a food processor!

Pair with fiber like roasted broccoli to keep you full and lean! 

Ingredients:

  • 2 packs of boneless, skinless chicken breast, cut into tenders

  • 2-3 large tomatoes

  • Healthier Italian wishbone dressing: 2 tbsp olive oil, dried oregano, basil, thyme, rosemary, salt, pepper—to taste

  • 1/2 c fresh basil

  • 4 cloves of garlic

  • 5 whole sun-dried tomatoes

Instructions:

  1. Preheat oven to 350 F. Line a baking sheet with parchment paper.

  2. Cut tomatoes into smaller pieces and pulse them in a food processor until blended.

  3. Add olive oil, spices, fresh basil, garlic, and sundered tomatoes to the food processor. Pulse all ingredients together until there’s a thick sauce.

  4. Line raw chicken tenders on the baking sheet. Spoon a heaping amount of the tomato basil sauce over each piece of chicken.

  5. Bake chicken for 1-1/2 hour, depending on preferences.

  6. Serve hot and enjoy!
