Cauliflower Bean Soup— Quarantine Cooking!

I’ve been working with my clients on what to eat with what you have and planning out what to make and freeze! Soup always helps me feel cozy and it’s easy to make. We made this vegetable soup, but you can mix and match any ingredients! Start with a mirepoix base, add a vegetable, add a protein, add broth and some herbs and spices, and viola! You have a soup. 

Cauliflower Cannelloni Bean Soup

  1. sauté mirepoix 

  2. add garlic and sauté until fragrant 

  3. add cauliflower 

  4. add 1 L container of broth and bring to simmer

  5. add cannelloni beans or chickpeas — or whatever beans or peas you have on hand!

  6. add herbs de province, oregano, salt and pepper for taste and let cook for 20+ minutes
