Healthy Banana & Almond Butter Cookies
If you’ve got a sweet tooth like me, then you know that a day always ends in dessert :)
Usually for dessert I’ll go for some fruit and that does the trick, but sometimes chocolate is in order. I try to find dessert recipes that are easy, use minimal/natural ingredients, and are nourishing so that I’m satisfied after eating. This is one of my favorites because it’s quick and uses ingredients you already have on hand, like overripe bananas you’re ready to get rid of. Plus it’s a cookie and you can’t go wrong with that!
What you’ll need:
2 very ripe bananas
¼ cup natural almond butter (sub natural peanut or sunbutter if you prefer)
1 cup rolled oats
¼ tsp baking powder
1 tbsp vanilla extract
¼ cup unsweetened semi-sweet chocolate chips (these are optional but I love Enjoy Life chunks!)
Steps:
Mash bananas and combine all ingredients.
Preheat oven to 350 while dough chills in the refrigerator (allow dough to chill for at least 15 minutes). Scoop dough with a tablespoon onto a baking tray and bake for 15-18 minutes. Sprinkle with flaky sea salt when done for added flavor!
Healthy eating does not mean you have to avoid dessert. Sweets are part of having a healthy relationship with food, especially when they’re natural & nourishing. It’s all about listening to those hunger cues and deciding what’s best for you.
Try these and see how you like! You can also change it up by adding cinnamon & coconut instead of chocolate chips, or even go for some walnuts, dried fruit, or flax/chia seeds.
