Fajita Fiesta Recipe!

This dish is packed with fiber, vitamins, minerals and protein! It’s super easy to make and a staple in my home. It’s low carb, high fiber and perfect for a tasty dish that will help you balance your blood sugar, lower cholesterol, maintain a healthy weight and feel good!

Ingredients

Organic boneless chicken breast

Red, Orange and yellow pepper

Garlic

Lime

Crushed Pineapple chunks (8 oz)

Apple cider vinegar or red wine vinegar

Taco or Fajita seasoning (if you don’t have this you can use cumin, paprika, chili powder)

Cilantro

Steps:

  1. Marinate chicken in pineapple chunks, 2-3 tsp of fajita seasoning, 3 minced garlic, and 2 tbsp of apple cider vinegar, ½ lime juice, and 1 tbsp of cilantro - let sit in fridge for 3 hours or room temp for 30 minutes 

  2. In pan add oil and cook the chicken for 10 minutes, remove the chicken from pan and add onions & peppers

  3. When vegetables are cooked add the chicken back in and saute together. Add more fiesta or taco seasoning for desired taste. 

  4. Serve with some avocado, fresh herbs, hot pepper, cut up tomato, greek yogurt, organic cheese or on a @siete fiber wrap.

This recipes makes easy leftovers! You can add to quinoa for a hearty nourish bowl or a bed of greens with avocado for fajita salad.
