5 Ways to Use Strawberries

Summer is here, which means strawberries are in season!

Strawberries are some of my favorite summer fruits. They contain some of the highest antioxidant levels out of any fruit, and pack 3 grams of fiber per cup. Strawberries are a great source of vitamin C, manganese, potassium, and even have some folate.

There are so many ways to use strawberries in the summertime. Here are 5 ways you can add strawberries to your diet:

Frozen Strawberry Yogurt Bark

This recipe is super fun to make and so easy! All you need is plain or vanilla Greek yogurt (I use Siggi’s plain Icelandic yogurt), strawberries, and any preferred fixin’s—I love to add chopped pistachios & cacao nibs.

1 large tub Greek yogurt

1 pack fresh strawberries

Nuts, seeds, cacao nibs, granola, or other toppings of choice

Spread Greek yogurt on a baking sheet to make an even layer, not too thick but not too thin. Slice strawberries thin and place them on top of the yogurt. Sprinkle with chopped nuts, granola, cacao nibs, or leave as is. Place the tray in the freezer for at least 4 hours but ideally overnight. When frozen, use the end of a wooden spoon or a mallot to break the yogurt layer into bark pieces. You can store these in a ziploc bag in the freezer to enjoy as a snack or dessert whenever!

Strawberry Mango Salsa

Change up your salsa game with this flavorful recipe! You’ll need:

1 cup fresh strawberries, diced small

1 mango, diced small

1 avocado, diced small

¼ red onion, finely chopped

1-2 tbsp cilantro, chopped

Juice of 1 lime

Pinch of salt

Mix these ingredients together with lime juice at least an hour before serving to allow the flavors to blend. Siete chips work great with this! You can use the code abigailnutrition to get 25% off your order.

Strawberry & Balsamic Salad

This recipe takes the classic caprese salad to the next level. This salad is great to serve at any BBQ and is so refreshing! You can also put it over greens to make it more of a meal.

1 package cherry tomatoes, halved (the multicolored ones are the best!)

1 avocado, diced

1 cup strawberries, halved or quartered

1 small container of fresh mini mozzarella balls

Fresh basil, roughly chopped

¼ cup balsamic vinegar + drizzle of olive oil

Strawberry, Watermelon, & Feta Salad

This salad is one of my absolute summer favorites and is always sure to please:

2 cups diced watermelon

1 cup sliced strawberries

⅓ cup feta cheese, crumbled

2 tbsp mint, roughly chopped

Juice of 1 lime

You can also add cucumber or cantaloupe to this recipe—both are great!

Strawberry Smoothie Bowl

Smoothie bowls are so refreshing in the summer and make a great snack or meal when you add protein, healthy fat, and fiber. My favorite smoothie bowl has:

6 oz plain Greek yogurt

Handful of fresh or frozen strawberries

Handful of cashews (unsalted) for extra thickness OR ½ avocado

Squeeze of lemon juice

Blend these ingredients together until you get a thick & smooth product. You can add some unsweetened almond milk or water if you prefer your smoothie a little bit thinner, or transfer your thick smoothie into a bowl and top with chia/flax/hemp seeds, nuts/nut butters, banana, more berries, or any other protein/fiber-filled foods.
