Watermelon Feta Salad
As the weather warms up and we approach Memorial Day and the kickoff to summer, it’s the perfect time to start making refreshing summer salads!
One of my personal favorites is Watermelon Feta Salad. It’s so simple, hydrating, and full of great flavor. You can serve it as an appetizer or make it a meal by adding a protein or half a sandwich. It makes the best side salad at a barbecue!
Did you know that watermelon is about 91% water? Cucumber, the other key ingredient in this salad, is 95% water. These foods are super hydrating for those hot days, and they’re also full of micronutrients like vitamin A, vitamin C, vitamin K and potassium. Watermelon and cucumber both contain a healthy amount of fiber, and are considered volume foods, which means they provide minimal calories when eaten in large volumes!
You’ll need the following ingredients for this salad:
1 cup watermelon, diced
1 cup cucumber, diced
½ cup crumbled feta cheese
Juice of ½ lemon or lime
½ tsp dill or mint, chopped
½ tbsp parsley, chopped
Toss all ingredients together. Allow to marinate for at least 1 hour in the refrigerator before serving to allow flavors to blend.
